Recipe | Shaved fennel salad with fish skewers

This shaved fennel and mandarin salad with fish skewers is a fresh and flavorful dish with a Mediterranean flair. The salad is topped with grilled fish skewers, marinated in lemon and EVOO for a light, healthy meal full of vibrant flavors.

Ingredients

1 fennel bulb, shaved in a mandolin or thinly sliced
A handful of Mike's Manzanilla olives, sliced
2 mandarins
1 c of mixed herbs, parsley, coriander, mint
1 garlic clove
1 lemon zest + juice
150 ml of Picual EVOO
Salt, pepper and extra EVOO to dress the ingredients
400 g of kingfish or any fresh fish, largely diced and skewered

Directions

Season the fish with salt, pepper, oregano and lemon zest. Reserve in the fridge until you are ready to grill the skewers.

For the salad, mix the shaved fennel with the olives, salt, pepper, EVOO and place on a plate with the mandarins on top. Grill the fish skewers in a hot pan or BBQ grill for 2 min each side. Serve with a generous amount of salsa verde on top of the fish.
